Introducing….my Morning “Cookie”

I’ve decided today is the day to show you guys my (almost) daily breakfast meal.  I used to have scrambled eggs and veggies every day (and I still eat that occasionally), but the thought of my morning cookie perks me right up when I come downstairs with my early-morning-loving child. :)

This was inspired by my friend Lindsay, who found a recipe for a mock cookie dough created to help people with their addiction to the stuff. (haha)  I was craving something sweet one day (but not looking for something super sweet), so I called her and asked for that recipe.  I modified it a lot and I eat the combo below almost every day. 

I use the word “cookie” jokingly because even though it tastes sweet to me, this “concoction”, as Lindsay calls it, is so healthy and nutrient-rich that it keeps me full for hours – seriously! 

Here’s how I make it:

About a tablespoon of organic millet seed (for crunch, iron, protein, carbs):

About a tablespoon of flaxseed (omega-3s) and a few shakes of cinnamon (tons of health benefits – google it!):

About 1/2 a cup of oatmeal (fiber, carbs, and protein) and a large tablespoon of 100 % all-natural, *no sugar* peanut butter (protein and creaminess):

And a swizzle (?) of honey on top – for sweetness only. :) (I used to add a few chocolate chips but I weaned myself off of them.)

Add a glass of organic milk (yeah for no hormones) and you have my daily meal that makes me excited for the morning. :)

Is it low-carb?  No. 
Is it low-fat?  No. 
Did God make all the ingredients?  Yes. :)

I am definitely not afraid of fats anymore after Somersizing and reading all my “clean” books, and I’m not afraid of carbs if they’re in their natural, unrefined state.  I can eat this every morning for breakfast and still maintain my weight if I follow Level 2 Somersizing for the rest of the day.

  2. This looks great! I Somersized for a long time, but after 3 kids I found it hard to maintain so I'm on WW now trying to lose the last 15 pounds from baby #3 (now 4 mos. old). I look forward to checking out more of your recipes.

  4. I have heard about Somerizing, but you're the first person I have ever "met" to say it worked (or that tried it). It sounded like a great plan. Maybe I will have to give it a second glance?

    Your breakfast looks yummy and like something some of my picky eaters would enjoy :)

    I eat this raw, as is. Somersizing is a diet created by Suzanne Somers (I know a lot of people hate her but her diet is great!). You avoid all processed foods, sugars (except fruit and milk sugars), white flours, and certain starchy veggies. You also eat foods in specific combinations to aid digestion and weight loss. There is no calorie counting or measuring or journaling - you eat until you're full. When you reach a happy weight, you get to Level 2, where you tweak the rules a little until you find a happy medium for you. I am a big fan! :)

  8. Interesting. This is almost identical to the granola bars I make for my husband. Only I also add choco chips and eggs. Yummy. He could eat a whole pan in a day. I'm not sure if THAT'S healthy? ;)

  9. this is a fantastic idea!!! i'm so excited to try it! and i already have everything to make it! i will be using soy milk though, i all of a sudden have a major aversion to milk. but, soy is majorly healthy anyway! yay! thanks!

  10. That sounds good. Unfortunately my oldest has a peanut allergy so I couldn't add in the peanut butter. Can you think of anything I could substitute for the peanut butter?

  14. Jessica, I tried your "cookie" and I love it. It reminded me of no-bake cookies in a way so I added cocoa powder instead of cinnamon once and it was delicious, too. You should try it.... Plus it has lots of antioxidants! :)
