Pumpkin Oatmeal Chocolate Chip Cookies

Also known as: THE PERFECT FALL COOKIE.  Oh yeah, I said it.  These puppies are fabulous.  Put it this way – I made 23 of these last night for the 5 of us (we’re staying with my parents and brother, remember?), and there’s only 8 left.  And it’s 7:45 a.m. 

The awesome thing about these is that the pumpkin makes them SUPER moist.  I’ve never had a cookie so moist before.  Oh my gosh, I’m salivating already.  I had two last night plus some hearty bites of raw dough, and I’m restraining myself from any more.
That doesn’t mean I’m not thinking about it. ;)

Pumpkin Oatmeal Chocolate Chip Cookies

1 C white whole-wheat flour
1/2 C quick cooking oats
1/2 t baking soda
1/2 t ground cinnamon
1/4 t salt
1/2 C butter, softened
1/2 C brown sugar
1/2 C white sugar (or less)
1 egg
1/2 t vanilla extract
1/2 C canned pumpkin puree
1 C chocolate chips
Preheat oven to 350.  Combine the flour, oats, baking soda, cinnamon and salt; set aside. 
In a large bowl, cream together the butter, brown sugar and white sugar until smooth.  Beat in the egg and vanilla then stir in the pumpkin puree.  Gradually stir in the dry ingredients until well blended.  Mix in chocolate chips).  Drop by rounded spoonfuls onto ungreased cookie sheets.
Bake for 8-10 minutes in the preheated oven (I had to cook mine for about 12, so just watch them). Allow cookies to cool on baking sheet for 5 min before removing to a wire rack to cool completely.

*Next time I will reduce the white sugar to only 1/4 C.  Clearly, these have sugar, but if you remember Michael Pollan’s advice to “treat treats as treats”, it’s not as big of a deal.  Plus, have you ever checked out the label on pumpkin?!  It’s AWESOME for you.

FIVE grams of fiber and 300% Vitamin A in each serving.  So I feel that it helps balance out the high sugar content just a little. ;)

Trust me, you will not regret making these!  They got unanimous good votes from everyone in the family.  :)

  7. These sound delish and I will definitely be having someone make these for us soon! Funny, I substitute chocolate chips for raisins any chance I get. We also put chocolate chips in our pancakes - my parents always made our pancakes like that too growing up :)

  9. Thank you so much for posting this recipe. I needed to make some cookies for work next week and these would be perfect! I especially love the swap of chocolate chips instead of raisins. Pumpkin and chocolate is one of my favorite fall combos.

  10. Just made a batch...they turned out great! I made them with wheat flour & put in 1/2 cup of extra oatmeal -and added some nutmeg and ground cloves for some extra "fall" spice. Yum!
